Bristol dads create unique fermenting badge

Two Bristol fathers with a vigorous passion for fermented foods are using their daughters’ Scout troop to share their knowledge on the subject with other children.

After conducting three fermentation workshops with the kids of 63rd Bristol, Matt White and James Bayliss-Smith used an AI tool to create what they have called the world’s first fermentation badge.

The kids have dedicated themselves to the unique workshops – where they make everything from kombucha to hot sauce – only so they can earn the fermentation badge.

Speaking about the response to their efforts, White added: “These young people are the future, and it’s been so encouraging to see how enthusiastically they’ve taken to earning their Fermenter’s Badge.

White continued: “It’s absolutely a step in the right direction away from ultra-processed food.”

Together the duo, run a project called ‘Microbes for Masses’ that is aimed at providing organic, handcrafted alternatives to ultra-processed foods.

White is also the founder of Muti, a business handcrafting ferments only using plants and organic-approved sea salt.

Bayliss-Smith who also runs, Nania’s Kombucha called the workshops as highly “rewarding” for themselves and the families of the children.

He added: “Many families have approached us to say they’ve continued their fermentation journeys at home, which is hugely rewarding.”

“Our food system is broken, and teaching people to ferment at home is our small way to help get our society back into healthy eating habits.”

CEO of the Fermenters Guild, Robin Sherriff, called the duo’s approach and efforts “innovative”.

“This grassroots initiative demonstrates how traditional crafts can capture young minds and spark scientific curiosity.

“This kind of hands-on learning experience epitomizes the spirit of discovery that has driven fermentation practices for millennia.

“The Scouts should absolutely make this badge official and we’re here to help.”
