Sourdough bakery to open in shipping container

One of Bristol’s best success stories which emerged from the pandemic was Bakers & Co, a cafe and brunch hotspot who repurposed themselves to become a bakery and provisions store during lockdown.

Queues of locals stretched down the Gloucester Road hungry for sourdough baked goods, which include an opulent ham and cheese croissant topped with a cocktail stick of pickles.

Having scaled-up and invested in equipment, infrastructure and staff, the ever-popular sourdough bakery is now set to offer up their inventions to another neighbourhood in Bristol.

Cargo 2 in Wapping Wharf will be Baker’s & Co’s newest home, a location co-founder and experienced business owner Kieran Waite is passionate about.

He said: “I’ve seen it transition from a destination that people might visit on a summer’s day or weekend to be by the waterfront, to an integral part of Bristol.

“It’s now a bona fide neighborhood… and there’s some phenomenal food, drink and retail businesses there.”

Operations and baking will stay put on Gloucester Road, where customers first had a taste of a their much-loved sourdough goods which were dreamt up over lockdown.

When the supply of fresh yeast ran out, Bakers & Co started to experiment with making their baked goods using a sourdough base. The fermentation process takes three days – but it’s worth it.

Concocting innovative baking techniques in the kitchen is head baker Brett St Clair, who has 20 years of experience in cheffing and baking.

He has also developed a range of soft drinks called kvass, traditionally fermented using leftover bread from the kitchen.

“It is similar to kombucha, but it’s made with the bread that’s left over. We toast the bread, ferment in sugar syrup and infused with lemon and ginger – making a nice kind of like sparkling sour drink”, he explained.

Bakers & Co in Cargo 2 will be offering bread, pastries, sweet treats, provisions and local coffee with beans from Extract Coffee, and is set to open Monday, March 7.
