New pizzeria to open in ‘iconic’ former restaurant

By Martin Booth  Friday Mar 12, 2021

A pop-up alfresco restaurant founded during lockdown is set to open its first permanent premises.

Pizza Bianchi, which began life in 2020 as part of Lakota Gardens in St Paul’s, is from the same team who own restaurants including Pasta Loco and Pasta Ripiena.

The dough for the pizzas went through a two-day fermentation process, with the prep work done at the group’s kitchen in Easton that before the pandemic was due to be where they launched an events business from, and has since been used to cook meals for some of Bristol’s most vulnerable residents.

The permanent Pizza Bianchi will be opening on the Clifton Triangle in a building that was Rocotillos for more than 25 years until it closed last year.

Rocotillos was an American-style diner established in 1993 that found fame from being one of the most popular hangouts in Chanel 4 drama Skins.

In a post on Instagram, the Pizza Bianchi team said that “there’s plenty of work to do so we are hoping to open late spring with some wicked offerings”.

“It’s been a rocky year and then some but we are determined to keep pushing through. Our journey continues with you.”

In the accompanying video, Dominic Borel from Pizza Bianchi said: “You’ll have to bear with us. There is quite a little bit of work to do but we’re going to try and recreate something beautiful as this legendary iconic spot will soon become Pizza Bianchi.”
