10 Questions: Laura Hart

Laura Hart is owner of Hart’s Bakery on Lower Approach Road next to Temple Meads, which celebrates its fifth birthday this month.

The business was founded after Laura, previously the in-house baker at the Lido in Clifton, started selling biscuits from a stall on her bike at the 2010 Bristol Cycle Festival.

1) What was your earliest ambition?
Growing up I wanted to be a vet as I loved animals but was put off my the tough grades needed. You don’t need much in the way in the qualifications to be a baker!

2) How physically fit are you?
Not as much as I’d like to be but I’m on my feet all day and would love to know how miles I walk up and down the arch and around our big wooden table.

3) If you were mayor of Bristol for the day, what would you do?
Give everyone a day off work so they can explore parts of the city they don’t normally get to. We’re pretty much all guilty of sticking to the bits we know.

4) Where is your favourite holiday destination?
Ah holidays, I remember those… It’s difficult to get away when you have a business so I’m going to say the place I want to go to most, San Francisco. It sounds like it has a great food and outdoor scene and a vibe not dissimilar to Bristol.

5) What’s your biggest extravagance?
Eating out. When you cook for other people all week it’s great to be on the other side of the kitchen sometimes and Bristol has such a vibrant food scene it would be rude not to.

6) In what place in Bristol are you happiest?
Katie & Kim’s Kitchen on Picton Street in Montpelier. Fantastic food and a warm welcome means I can feel at home there any time of day. 

7) What ambitions do you still have?
Nothing big or fancy. I just want to keep pushing the standards of what we are doing at the bakery. Not bigger, just better!

8) What is the greatest achievement of your life so far?
I guess it would have to be opening the bakery, although I can really take very little credit for it myself. There’s a fantastic team and one hell of a boyfriend behind me.

9) Can you sum up Bristol in a sentence?
Small enough to be friendly, big enough to be exciting.

10) What is your favourite secret spot in Bristol?
I discovered Eastville Park recently and judging by how quiet it was, it’s still a bit of a Bristol secret. It’s an amazing space with lakes and lots more paths to explore. My favourite thing about Bristol is that you can be so close to the city centre but feel like you’re in the country.
