New Michelin Green star for Bristol bistro

Bristol has a new Michelin star.

It’s not a traditional star, however, but a new Green star, introduced in 2021 to highlight restaurants at the forefront of the industry when it comes to their sustainable practices.

The Ethicurean in Wrington keeps its own Green star in the 2022 guide, with retained Michelin stars for Bulrush in Cotham, and Casamia and Paco Tapas in Redcliffe; as well as continued Bib Gourmand recognition for Box-E and Root, both in Wapping Wharf.

Bristol’s new Green star has been awarded to Wilson’s on Chandos Road in Redland, one of nine restaurants across the UK and Ireland winning a Green star for the first time.

“Every Green Star restaurant is different and works in its own unique way – but all make a difference to the world around them and act as role models to us all,” say Michelin.

“Many work directly with growers, farmers and fishermen; forage in hedgerows and woodlands; grow plants and rear animals; and use regenerative methods such as no-dig vegetable gardens and successional cover crop growing.

“They also often go beyond environmental considerations to address issues related to ethics and wellbeing, as well as contributing to local, national or global charitable and educational projects.”
