Bristol restaurant awarded first Michelin star
A restaurant in Redland which grows much of the produce on its menu at its own market garden has been awarded a Michelin star.
Wilsons already held a green Michelin star for its commitment to sustainable practices.
And now the neighbourhood bistro on the culinary hotspot of Chandos Road has got an even more prestigious accolade.
The Wilsons six-course set menu is priced at £75 and available at lunchtimes and evenings, Wednesday to Saturday; while their three-course £35 lunch menu is available from Wednesday to Friday.
“There is so much to enjoy, and so much to admire, when dining at Wilsons,” said the Michelin inspectors.
“It’s one of those appealing neighbourhood operations that works in pure harmony, with everyone from the chefs to the service team sharing the same ethos.
“Sustainability and careful sourcing of superb ingredients are at the forefront, with the restaurant’s own smallholding providing much of the produce on the tasting menu of expertly crafted dishes.
“Each one is exquisitely balanced and full of understated originality, like dry-aged trout with pickled mushrooms and sweet onion broth.”

Wilsons was opened in 2016 by Jan Ostle and Mary Wilson, with the restaurant now almost entirely self-sufficient and their bakery, Bread Shop, open just a few doors down the road.
Their ever-changing menu reflects the exact produce that is available at the time of harvest.
Ostle said: “Mary and I feel incredibly proud to have received this honour from Michelin.
“Our goal has always been to create something that reflects our values and passion and that serves Bristol and our local community.
“This award is testament to the dedication of our entire team, as well as the incredible farmers, producers and the people of Bristol who continuously support us.”

The Wilsons team were not the only Bristol brigade celebrating after the Michelin ceremony on Monday evening.
Three new Bib Gourmands – “committed to offering affordable, high-quality cooking” – have also been awarded to Bristol restaurants.
Little Hollows on Chandos Road, Other on Cannon Street in Bedminster and Tare Bistro in Wapping Wharf are the trio of new recipients.
They join Bristol’s other restaurants with a Bib Gourmand: the Blaise Inn, Box-E, the Clifton, COR, Marmo and Root.
Bulrush on Cotham Road South has also retained its Michelin star.
