Ex-head chef of Pony Bistro to take over Bristol Loaf for two nights of seafood celebrations

There’s arguably few people in Bristol better placed to cook fish than Hugo Harvey.

After helping set up the new Pony Chew Valley, the ex-head chef of the Pony Bistro left the Pony family to launch his own seafood pop-up, which has always been his passion. Harvey, originally from Norwich, has worked under Todd Moses and Nathan Outlaw in Melbourne and London respectively before joining forces with Josh Eggleton.

Blasé is Harvey’s latest venture, a monthly pop-up focusing on high grade seafood. Diners can expect eight courses, each introduced by the chef himself and paired with wines from Native Vine. The first iteration of Blasé at Bristol Loaf sold out a month ago and Harvey is back in the same venue later this week for another round. Tickets can be booked via Eventbrite.

Harvey said “I’m working with Native Vine to make this a proper social relaxed event instead of formalities hence the name ‘Blasé’ which translates to the easy going atmosphere with high-grade food”.

Those interested in taking it a step further and learning to saute their seafood like a pro can attend a class with Hugo at the Pony Chew Valley where they will learn how to cook, season and properly rest fish. Classes are £95pp, dates and bookings can be found on the Pony Chew Valley’s website. Other classes available focus on knife skills, making fresh pasta and even learning how to cook the perfect Christmas turkey.
