My Bristol Favourites: Jack Briggs-Horan

Jack Briggs-Horan is head chef and co-owner at Bank in Totterdown.

The restaurant was recently named among the top-ten best Sunday roasts in the UK by Rate Good Roasts and is also in the Good Food Guide’s list of Britain’s 100 Best Local Restaurants.

Jack has previously worked as a chef at the Ox and at the former Glassboat, and helped open Seven Lucky Gods and Four Wise Monkeys.

These are Jack’s top-five Bristol favourites:

Stoke Park Estate

“My best friend is also a chef so he’s the only person with a similar work schedule. On Mondays and Tuesdays, we take my youngest son out to a forest for a walk and a forage. We’re always looking for mushrooms and edible plants.”

Wai Yee Hong

“I love Asian food (I’ve opened two Asian restaurants). I spend an inordinate amount of time perusing the shelves of foreign supermarkets like Wai Yee Hong in Eastville looking for inspiration and new ingredients. Also helps to stock up the restaurant larder.”

Mayflower

“I don’t get to eat out much (job, kids etc) so a late night Mayflower visit is a must. I always get one of the clay pot dishes and try and try some of the more interesting dishes from the menu.”

Sweat Box Gym

“I’ve been going to Sweat Box Gym in Bedminster since I was 17. It was just a little room above a travel agent then. When I got tired of being clobbered at muay thai, I started Brazilian jiu jitsu. It’s very cathartic and also humbling. It’s also hard to get stressed at work when you’ve already been strangled before breakfast.”

“I’m pretty busy most of the time so any chance to relax, I’ll head out back and light a barbecue. Maybe have some friends around and watch the kids bounce on the trampoline.”
