Former Casamia head chef Zak Hitchman to open new restaurant

Zak Hitchman’s first restaurant is set to open just over two years since the closure of Casamia where he was head chef.

Opening on Cannon Street in Bedminster in September, Other will be open for dinner from Wednesday to Saturday.

Six Instagram posts in different colours tease what is coming soon including small plates, bigger plates, “a cool new smoker oven” and doughnuts.

Writing on Instagram, Hitchman said: “Other, a Bedminster restaurant, opening in September. Very colourful, open to all, independently owned, locally sourced, nice drinks, cool new smoker oven, hot doughnuts, Dean Lane adjacent, North Street neighbours, Cannon Street massive, small plates, bigger plates, snacks, super tasty, cash caszh (casual). Dinner Wednesday-Saturday. Brunch eventually.”

Hitchman’s first taste of hospitality was working in pubs in Sussex where he grew up.

He came to Casamia at The General in Redcliffe from Ynyshir in mid-Wales, “the place which changed everything for me, cooking-wise, food-wise, eating-wise and changed me as a person,” he told Bristol24/7 in 2021.

Casamia closed in 2022 after 25 years having been changed almost beyond recognition under Hitchman, with the white walls of the dining room painted black and the £180 20-course meal soundtracked by loud music with flashing lights.

32 Cannon Street where Other will be located was most recently Lunch Box and before that a Polish butcher, a second hand store and a computer shop.
