Bristol’s newest Gail’s to open in former Waterstones
It was formerly a Fopp and before that was a Waterstones.
Soon, 28 College Green will become Bristol’s third Gail’s as the rapidly expanding chain eyes up another corner of the city following openings in 2024 in Clifton Village and earlier in 2025 on Whiteladies Road.
Gail’s is a business that divides opinion, with some people welcoming more choice and praising their baked goods, and others criticising the cafe and bakery founded in London in 2005 for taking business away from plucky independents.

“We bake fresh, handmade bread, pastries and cakes every day, served with our carefully-sourced house blend speciality coffee,” says the Gail’s website.
“Though we’ve grown over the years, our philosophy has remained the same: to make good food that people love, and create bakeries that people want to keep coming back to.”
