New vegan pasta restaurant to open in central Bristol

A new vegan pasta restaurant is coming to Bristol.

Pastan will be moving to Prince Street, formerly occupied by Friska.

With restaurants in Manchester and Bristol, Pastan is returning to Bristol after the success of their pop-up at the Nectar House on Gloucester Road in the summer of 2021.

Pastan will offer vegan alternatives to classic Italian pasta favourites like cacio e Pepe, pomodoro and carbonara, as well as popular dishes like the caesar salad and the caprese.

The restaurant group’s sustainability ambitions extend further than their vegan credentials however. Pastan is also signed onto the Carbon Free Dining initiative, operated in partnership with Sustainability Run Restaurants group.

The scheme gives restaurants and their diners the opportunity to mitigate the environmental impact of their meals by planting fruit trees.

The new restaurant will offer larger lunch and evening as well as small plates and an array of cocktails. Prices will range from £12 to £15 for mains.

Pastan also has an online shop, selling fresh pasta, doughnuts and sauces. They are currently working on a number of vegan pasta sauces, in collaboration with Heura and THIS, which people will be able to order online or buy in store.

Pastan began in November 2020 when co-founders Dean Fawcett and Jerome Ibanez-Fawcett decided to set up their own restaurant after working together in the hospitality industry for over 20 years.

With healthy vegan and plant-based pasta dishes, Jerome and Dean hope Pastan will entice vegans and non-vegans alike.

The restaurant is set to open before Sunday.
