From corporate marketing to croissants and coffee
The earthy and sweet aromas of coffee and pastries were wafting around a dim sum cafe and wine bar on Saturday morning.
It was the start of a season-long pop-up for a mobile patisserie and cafe that is taking over Clouds on Mina Road in St Weburgh’s every Saturday morning until Christmas.
Laid out on trays were a range of voluminous treats, including fig and ricotta Danish pastries, cinnamon buns, Eccles cakes and croissants.

They had all been made by Hilda Bakery owner Will Prosser, 44, who is normally spotted parked up on Whiteladies Road, and previously at Redland Green, selling his wares in a little green van.

Prosser previously worked in marketing before discovering a passion for pastry-making and subsequently spent two years at Little Shop & Pantry in Henleaze.
“I’ve always been into baking, but over lockdown the passion got deeper and deeper,” he said.
“I got into making pastries and croissants at home, and then got to the point where I decided I wanted to pursue it as a living.
“It’s totally different, but I love it, especially getting to be outside lots with the van.
The name of the bakery comes from Prosser’s great-grandmother, Doreen Hilda Evans.
Speaking about the new residency, the baker said: “It’s great to try a different neighbourhood and it’s so vibrant down here, I’m hoping it will be popular.”
