Fat Rice x Gigi’s Pizza: A food collaboration like no other, for one night only
For one night only two of Bristol’s most loved food vendors are teaming up to create something you cannot get anywhere else.
Fat Rice owner Kit Lee and co-owner of Gigi’s Pizza, Rapha Persighetti are collaborating on a dish that fuses bold Malaysian flavour with iconic pizza craft. The result is an exclusive one-off creation that will only be available at the EatDrink24/7 launch party.
This is the first foodie collaboration to be announced for the event – keep an eye out for Clouds x Root!

Gigi’s Pizza, based on Old Market Street, has quickly become a Bristol favourite with its hybrid style that blends the best of New York and Neapolitan pizza traditions.
Their dough is light but strong with the perfect amount of chew and char. Their base is the canvas for this collab — and it’s the perfect one.

On top of Gigi’s signature base, Fat Rice loads it up with serious flavour. Expect tender satay chicken marinated overnight then grilled over charcoal, rich peanut sauce and bubbling mozzarella.
Then come the layers: sharp red onion, sweet pickled cucumber, honey peanuts, puffed rice, crispy onions and a fresh squeeze of lime to finish it all off.

It is a full reimagining of a beloved Malaysian street food dish. Traditionally, satay chicken is served with cucumber, red onion, peanut sauce and compressed rice cakes known as ketupat. Kit, the owner of Fat Rice — a regular at markets across Bristol and a go-to for Malaysian comfort food — has taken all those elements and given them a vibrant twist, switching rice cakes for puffed rice and adding pickled elements for an extra edge.
