Bristol restaurant features in series uncovering ‘mysterious’ ways of Michelin inspectors

One of Bristol’s most acclaimed restaurants will feature in a documentary series, unearthing for the first time the “mysterious” methodologies of Michelin inspectors behind awarding a star.

Jan Ostle, co-owner of Wilson’s on Chandos Road, appears for a brief second in the trailer for Apple TV’s new documentary series, Knife Edge: Chasing Michelin Stars.

Wilson’s, which was awarded a red star in February to pair with its existing green star, will appear alongside Michelin-starred restaurants from New York, Los Angeles, Mexico City, London and other places.

Hosted by Jesse Burgess of TopJaw, the Apple TV show will take viewers through a culinary journey like no other, where they hear from the coveted Michelin inspectors for the first time, in a job that one inspector has likened to working for the CIA.

In a post on Instagram, the Wilson’s team said: “Earlier this year, something quite out of the ordinary happened here at Wilson’s. A film crew from Apple TV turned up in Bristol to follow us around our kitchen and regenerative market garden for their new series, Knife Edge: Chasing Michelin Stars.

“The eight-part series follows the highs and lows of kitchens around the world – from New York, LA and Mexico City to Copenhagen, London and our little corner of Bristol – exploring what it takes to achieve and hold onto a Michelin star.

“It feels incredibly special to be able to share this important part of our journey with our community. The film really is a window into what we do and the people who work so hard every day to make it happen.

“We’re beyond excited to see it come to life. So many people have been part of our journey and made us what we are today.”

The show, which has Gordon Ramsay as one of its executive producers, premieres on Apple TV on October 10.
