Root x Clouds: an exclusive collaboration for EatDrink24/7 launch

Two of Bristol’s best restaurants – Root and Clouds – will be serving two collaborative dishs at the launch of Bristol24/7’s annual food and drink guide on June 26.

EatDrink24/7 is a unique and completely independent guide to Bristol’s best food and drink places. Attendees at this event will be the first to get their hands on the guide. All recommendations in EatDrink24/7 come from a panel of more than 60 Bristol food and drink stalwarts, including Michelin-starred chefs, seasoned restaurateurs and head chefs.

To amp up things for the launch, we thought of bringing some of the most recommended places together for an exclusive culinary creation for the event.

Joby Fowler from Root and Anita Cheung from Clouds and Ah-Ma’s Dumplings have come together to create two very special collaboration dishes for the event on June 26

Root has had many accolades since it opened in 2017, including being consistently awarded a Bib Gourmand and a nomination for Best Vegan-Friendly Restaurant at the British Restaurant Awards. It focuses on locally sourced produce and vegetable-first dishes.

Clouds which opened doors in November 2024 in St Werbugh’s is a relatively new addition to the Bristol food scene. However the sister restaurant to Ah-Ma’s Dumplings, has received instant success with their innovative approach to traditional Cantonese cuisine. Specialising in delicious handmade dumplings and seasonal small plates packed full of flavour they’ve very quickly become a firm favourite of the city.

Having devised the dishes together Clouds and Root are each bringing their own complimentary elements to the two dishes that will be available exclusively at the EatDrink24/7 launch on June 26. Attendees can expect a Cantonese roast pork with a 5-spice seasoned do-it-yourself dipping salt to add an umami hit or steamed organic bao bun with spicy coconut butternut squash. As you would expect Root have concocted some very special veggie creations for their part of the dishes, celebrating ingredients like cucumber, chilli, coriander, spring onion, green beans, miso cashew and burnt lemon sesame.

Talking about the inspiration for the pork dish Anita from Clouds said: “Root is well known for creating delicious dishes with the vegetables they source so well, so I wanted to bring something that would be a great match.

“Cantonese roast pork has a light marinade on the underside and uses belly pork so is incredibly juicy while also having the super bubbly crackling crunch on top.”

Explaining the vegan dish, Anita added: “I wanted to represent Clouds, so my first thought was our steamed bao buns that have been described as fluffy clouds!”

If that’s not enough to get your tummy rumbling this is just one of the panel-pick collaborations at the EatDrink24/7 launch party with the other coming from Malaysian street food heroes Fat Rice and New York pizza dons Gigi’s Pizza. They are teaming up on a very special satay pizza which you also won’t find anywhere else.
