Michelin Guide restaurant to host wine courses

The Pony Chew Valley is soon to become the new epicentre for sustainable wine education in the South West as it partners with Cornwall’s renowned Wild Wine School. The new collaboration marks an exciting expansion for Wild Wine School and an opportunity to reach new enthusiasts and industry professionals in Bristol and London.

For five years, Wild Wine School has led the charge in sustainable wine education in the UK, blending accredited qualifications with unique, nature-centric learning experiences. Its innovative approach encourages students to interact with their environment, enhancing their sensory appreciation of wine through direct engagement with nature.

This June, The Pony, a revered country pub and restaurant owned by culinary duo Josh and Holly Eggleton, will host the school’s debut courses. The partnership promises a rich blend of gastronomy and viticulture, steeped in environmental sustainability. “The combination of The Pony’s commitment to local sourcing and our educational ethos creates a perfect synergy,” said Debbie Warner, founder of Wild Wine School and an advocate for environmentalism in wine education.

Students at The Pony will enjoy a dynamic learning atmosphere where they can explore wine education within the pub’s expansive gardens. This hands-on experience is designed to connect them not only with the intricacies of wine but also with the origins of their food, emphasising a farm-to-table philosophy.

The Pony’s kitchen team is already known for its dedication to sustainable practices, a core value that aligns with Wild Wine School’s mission. The upcoming courses will offer participants a holistic view of sustainability that extends from vineyard management to culinary excellence.

Reflecting on the expansion, Warner shared, “Our goal has always been to foster a network of like-minded educators who are passionate about integrating sustainability into wine education. Partnering with The Pony and welcoming new talents to our team are significant steps toward realising this vision.”

The first WSET Level 2 course will be taking place at the Pony in June. The price for the course is £525 and includes tea, coffee and a light lunch on course days.
